As the Training Head Chef, youβll work closely with the Executive Chef to lead, train, and inspire the kitchen staff at various lodge properties. Youβll be hands-on in maintaining the highest food standards, ensuring effective kitchen operations, and developing the next generation of culinary talent. Manage and train kitchen staff across the lodge properties to meet the highest standards of food preparation.
Oversee kitchen administration to minimize wastage, shortages, and variances, ensuring cost-effective food operations.
Implement robust stock control systems and asset management to ensure optimal kitchen performance.
Maintain exceptional kitchen hygiene and cleanliness standards, with a focus on proper stock rotation.
Implement effective communication between the kitchen, management, and front-of-house staff.
Supervise the preparation of meals and functions to ensure they meet the groupβs standards.
Mentor, train, and develop kitchen staff to reach their full potential within the group.
Conduct performance appraisals and guide staff in their development through regular feedback and open communication.
Collaborate with the Executive Chef in creating menus, ensuring that all food is prepared to the highest standards.
Minimum of 10 years experience in restaurant environments, with at least 5 years as a Head Chef.
Must have front-of-house (FOH) experience.
A strong commitment to mentorship and developing kitchen teams.
Cape Town-based, with a willingness to travel to the lodges for hands-on experience.
No dependents and a desire for a travel-focused lifestyle.
Reliable transportation is essential.
Food portfolio must be uploaded as part of your application.
Ability to thrive under pressure with strong attention to detail, organizational skills, and creativity in the kitchen.
Accommodation, food, and laundry provided on the properties.
Cape Town-based: Candidate is responsible for personal costs, except one daily meal provided during shifts.
