Role Overview: As the Senior Sous Chef, you will play a pivotal role in our culinary team, ensuring the delivery of exceptional dining experiences that exceed our guests’ expectations. You will collaborate closely with the Head Chef to curate menus that showcase the finest local ingredients, creativity, and attention to detail. Your expertise in fine dining and experience in luxury settings will be instrumental in maintaining the high standards synonymous with our lodge.

Key Responsibilities:

  • Assist the Head Chef in menu planning, recipe development, and execution of culinary concepts.
  • Oversee kitchen operations and maintain the highest standards of food quality, presentation, and hygiene.
  • Lead and mentor junior kitchen staff, fostering a culture of excellence and continuous improvement.
  • Manage inventory, procurement, and cost control to optimize efficiency and minimize waste.
  • Ensure compliance with health and safety regulations and uphold sanitation standards.
  • Collaborate with other departments to deliver seamless guest experiences and exceed expectations.

Requirements:

  • Previous experience working in luxury safari lodges or similar high-end hospitality establishments is essential.
  • Proven experience as a Sous Chef or Senior Chef de Partie in fine dining restaurants or luxury settings.
  • Strong culinary skills and a passion for creativity, innovation, and attention to detail.
  • Excellent leadership, communication, and interpersonal skills.
  • Ability to thrive in a fast-paced environment and adapt to changing priorities.
  • Knowledge of local Tanzanian cuisine and ingredients is advantageous.
  • Valid certifications in food safety and sanitation.
