Luxury Lodge


Kendrick Recruitment is now seeking a Head Chef for a luxury lodge based in the famous Sabi Sand Game Reserve. As the Head Chef, you will oversee the kitchen operations at the Lodge. Your responsibilities will include supporting and training junior chefs, managing special dietary requirements, and ensuring that high standards are maintained throughout the lodge. This role requires independence, a background in luxury lodges or villas in African settings, and a strong commitment to excellence.

Key Outputs:

Service and Kitchen Management:

Run and supervise the entire kitchen operation.
Collaborate with the Executive Chef to ensure that standards and goals are met.
Ensure adherence to all menu specifications and consistently deliver excellent food quality.
Support chefs in daily supplies ordering from the central store.
Provide support and training to new chefs on specific recipes if necessary.
Work with the Executive Chef to effectively implement the Chef Academy training program.
Continuously monitor and control the quality of dishes being served.
Personally interact with guests during each meal to ensure their satisfaction.
Continuously encourage and train staff to provide the best food experience to guests.
Adapt and accommodate unexpected requests and unusual dietary requirements.
Manage operations within the allocated budget.
Implement stock control measures, including rotations and monthly stocktake procedures.
Attend weekly kitchen meetings with the Front Office and management team to address food experience-related matters.

Provide continuous training and motivation to all kitchen staff, including on-the-job training.
Ensure clear communication and understanding of responsibilities among all staff members.
Foster good communication with chefs, including the Executive Chef and Heads of Department.
Maintain a positive working relationship with the Lodge Manager.
Qualifications and Experience:

Proven experience as a Head Chef in a luxury lodge or villa setting in Africa.
Strong culinary skills and knowledge of African cuisine.
Ability to work independently and manage a team effectively.
Excellent communication and interpersonal skills.
Understanding of budgeting, stock control, and menu planning.
Familiarity with training and development programs for kitchen staff.
