Kendrick Recruitment is seeking an Executive Chef for a prestigious lodge in Botswana.
The role involves overseeing kitchen operations, training chefs, meeting dietary requirements, and maintaining company standards. Experience in luxury lodges or villas in African settings is preferred. Formal Culinary qualification from a reputable educational outlet is a must for work permit reasons!
Key Outputs:
– Administration: Manage costs, ordering, stock, equipment reports, rosters, and personnel files.
– Food Safety and Hygiene: Maintain hygiene, adhere to dietary requirements, ensure HACCP compliance, proper storage, cleaning, and safety procedures.
– Menu Planning and Execution: Design menus, review staffing, maintain quality and presentation, follow food handling standards, manage equipment, and purchasing.
– Staff Management: Train, develop, motivate kitchen staff, demonstrate leadership, set performance standards, prioritise guest satisfaction, and ensure hygiene training.
– Guest Delight: Foster interaction, seek feedback, handle complaints, understand dietary needs, embody company ethos, and review guest feedback.
Skills Required:
– Proficient in English, excellent communication, organisational and lateral thinking skills, initiative, adherence to hospitality standards, integrity, and computer literacy.
Knowledge Required:
– Hospitality industry, environment, communities, Botswana, and company knowledge.
Previous Work Experience Required:
– Experience in the service industry, dealing with guests and staff, minimum 5+ years as a Head/Executive Chef, and passion for creating exceptional food.
