Minimum Requirements:
Education: Completed diploma in Professional Cookery.
Experience: Minimum of 3 years’ experience as a Head Chef or Sous Chef.
Communication: Ability to communicate and collaborate effectively with team members and clients.
Systems Knowledge: Proficient in Plus Point system.
Food Cost and Menu Planning: Extensive knowledge of food cost and menu planning.
Management Skills: Strong management skills.
Conferencing Experience: Essential for this role.
Duties and Responsibilities:
Food Procurement and Control: Maintain and control all food procurement, goods receiving, storage, issuing, stock taking, stock analysis, and stock security procedures.
Culinary Activities: Plan and direct food preparation and culinary activities.
Menu Management: Modify or create menus that meet quality standards.
Resource Estimation: Estimate food requirements and labor costs.
Staff Management: Manage kitchen staff operations.
Equipment Management: Arrange for equipment purchases and/or repairs.
Cost Management: Be price-conscious when purchasing food items or kitchen consumables.
Quality Control: Inspect each delivery to ensure food items are always of the highest quality.
Portion Control: Ensure that portion control is always managed.
Food Reprocessing: Ensure the reprocessing of food is actively implemented and managed daily.
Meal Reporting: Obtain a daily meal/arrivals report from the Front Office to ensure correct allocation of meals.
