Kendrick Recruitment is delighted to present a unique opportunity for a dynamic duo to join a prestigious establishment in Vilanculos, Mozambique. We are seeking a Head Chef and Food and Beverage Manager couple to lead our culinary and hospitality team and deliver exceptional dining and guest experiences.

Summary of Position:
The Chef will oversee all kitchen operations, while the Food and Beverage Manager will manage front-of-house operations and guest services.

Duties and Responsibilities for Chef:

Daily communication with General Management/Villa Manager regarding kitchen operations and guest preferences.
Menu planning and design, ensuring high-quality culinary offerings.
Supervision of kitchen staff and daily food preparations according to SOPs.
Management of routine maintenance and servicing of kitchen equipment.
Staff management, including rostering, training, and performance management.
Oversight of inventory stock takes and stock control.
Actively seeking cost-saving opportunities through supplier investigation.
Compliance with health, safety, and fire regulations in the kitchen.

Duties and Responsibilities for Food and Beverage Manager:

Daily communication with General Management/Villa Manager regarding guest preferences and front-of-house operations.
Oversee bar operations and manage beverage services.
Curio shop management and stock takes.
Guests arrival and departure procedures, including check-ins and check-outs.
Petty cash management and reconciliations.
Staff management, including rostering, training, and performance management.
Collaborate with the Chef on menu planning and guest dining experiences.
Assist in identifying cost-saving opportunities and improving operational efficiency.
Ensure compliance with health, safety, and fire regulations in front-of-house areas.

Package:
Comfortable accommodation provided.
Meals on duty and food and drinks budget.
One flight per year return to Johannesburg.
Salary combined around R50,000 gross.
Work schedule: 6 days off per month, flexible shifts.
Leave: Authorised in advance by GMs in accordance with business levels, starting with 24 days for the first year and increasing to 30 days per annum thereafter.
