Key Responsibilities:

  • Support Excellence: Assist the Group Executive Chef in all catering-related duties to ensure exceptional service for guests and staff.
  • Guest Experience: Ensure top-level food service and guest satisfaction.
  • Leadership: Direct, support, and supervise the kitchen team to achieve quality meal service.
  • Stock Management: Rotate, pack, and utilize produce efficiently; inform the Executive Chef of items needing attention.
  • Menu Development: Help create Mozambican evenings, tasting menus, children’s menus, and special dietary offerings.
  • Stock Checks: Assist in placing food orders and sourcing supplies cost-effectively.
  • Budget Performance: Work within budgetary constraints and assist in the budgeting process.
  • Planning: Manage time for tasks like baking biscuits and homemade granola.
  • Policy Adherence: Familiarize with and support the implementation of the Executive Chef’s policies and goals.
  • Stock Counting: Perform month-end stock counts and enter data into systems.
  • Team Support: Provide guidance and assistance to all department staff.
  • Excellence in Product: Bring dedication, hard work, and innovative ideas to maintain high standards.
  • Flexibility: Adapt working hours to meet guest needs.

Additional Responsibilities:

  • Team Management: Ensure kitchens are adequately staffed at all times.
  • Local Purchases: Manage local purchases, keeping records of transactions.
  • Supplier Relations: Maintain strong relationships with suppliers.
  • Invoice Management: Collate and submit invoices.
  • Purchases Entry: Enter all purchases into computerized systems.
  • Menu Meetings: Hold daily meetings with the hosting team to enhance food knowledge.
  • Menu Typing: Accurately and appealingly describe food on the daily menu.
