Kendrick Recruitment are currently seeking a talented and experienced Head Chef to lead the new culinary team at a game lodge outside of Cape Town. As the Head Chef, you will be responsible for creating exceptional dining experiences that showcase both international and local flavours, while ensuring the highest standards of quality and presentation.

Requirements:

  • Proven experience as a Head Chef or Sous Chef in a large volume hospitality setting.(600 pax)
  • Creative flair and a passion for culinary excellence, with a focus on using fresh, locally sourced ingredients
  • Proficiency in various cooking techniques and cuisines, including both international and South African cuisine
  • Strong leadership and management skills, with the ability to motivate and inspire a team
  • Excellent organisational and time management skills
  • Ability to manage food and labor costs while maintaining high quality standards
  • Strong knowledge of food safety and hygiene regulations
  • Ability to adapt to guest dietary requirements and create specialised menus
  • Exceptional communication and interpersonal skills
  • Flexibility to work in a remote location and adhere to lodge operating hours
  • Culinary qualifications and certifications will be advantageous

Responsibilities:

  • Develop and maintain menus for large fresh buffet offerings.
  • Oversee all aspects of the kitchen operations, including food preparation, cooking, and presentation
  • Lead and mentor a team of chefs and kitchen staff, fostering a positive and collaborative work environment
  • Ensure the highest level of quality and consistency in all food items served, while adhering to established standards and guest preferences
  • Source and select the finest local and seasonal ingredients, maintaining relationships with suppliers and ensuring optimal inventory management
  • Manage food costs and budgets, while maintaining the highest standards of quality and portion control
  • Collaborate with other departments, including food and beverage, to create seamless guest experiences and innovative dining concepts
  • Stay up to date with industry trends, new techniques, and culinary developments, bringing fresh ideas to the table
  • Train and develop team members, providing ongoing guidance and support to enhance their culinary skills and knowledge.
