Kendrick Recruitment is seeking a highly skilled and creative Executive Pastry Chef to lead our pastry department and elevate our dessert offerings to new heights. The Executive Pastry Chef will be responsible for developing and executing pastry menus, managing the pastry team, and maintaining the highest standards of quality and presentation.
Responsibilities:
Menu Development:
Design and create innovative and visually appealing pastry menus that complement the overall culinary concept of the establishment.
Stay abreast of current pastry trends and bring new and exciting dessert ideas to the table.
Leadership and Training:
Provide strong leadership to the pastry team, fostering a creative and collaborative work environment.
Train, mentor, and develop pastry staff to ensure a high level of skill and consistency in execution.
Quality Control:
Oversee all aspects of pastry production to ensure the highest standards of quality, taste, and presentation.
Conduct regular tastings and evaluations to maintain and enhance the quality of all pastry items.
Creativity and Innovation:
Bring a high level of creativity to the pastry department, introducing new techniques, flavors, and presentations.
Collaborate with the culinary team to create cohesive and harmonious dessert offerings.
Inventory and Cost Management:
Manage inventory and control costs by minimising waste and optimising ingredient usage.
Develop and implement cost-effective recipes without compromising on quality.
Collaboration with Other Departments:
Collaborate with the executive chef and other kitchen staff to ensure a seamless integration of pastry offerings with the overall menu.
Work closely with the events and catering team to design customised pastry creations for special occasions.
Compliance and Hygiene:
Ensure compliance with health and safety regulations in the pastry department.
Maintain a clean and organised workspace, enforcing hygiene and sanitation standards.
Qualifications:
Proven experience as an Executive Pastry Chef or in a senior pastry leadership role.
Extensive knowledge of pastry arts, techniques, and trends.
Strong leadership and interpersonal skills.
Creativity and innovation in developing new pastry recipes and presentations.
Exceptional organisational and time-management abilities.
Familiarity with cost control and budget management.
Pastry arts degree or equivalent certification is preferred.
