Position: Senior Sous Chef

Location: Private Luxury Lodge, Hoedspruit

We are seeking a passionate and dedicated Senior Sous Chef to join a team at a prestigious private luxury lodge in Hoedspruit. This role is crucial in assisting the Head Chef and Executive Chef with all kitchen operations, ensuring high standards of food preparation, hygiene, and presentation.

Key Responsibilities:

  • Assist the Head Chef and Executive Chef in planning and executing innovative and seasonal menus.
  • Supervise kitchen staff, maintaining high standards of food preparation and presentation.
  • Ensure quality control and consistency in all dishes served.
  • Oversee inventory management, including ordering, receiving, and stocking supplies.
  • Adhere to health and safety regulations and food hygiene standards.
  • Train, mentor, and develop kitchen staff, fostering a positive and efficient work environment.
  • Manage kitchen operations in the Head Chef’s absence and handle kitchen-related issues or emergencies.
  • Ensure proper cleaning of the kitchen and adherence to cleaning rosters.
  • Monitor and manage inventory, including daily stock rotation and ordering when needed.
  • Interact with guests and accommodate special dietary needs.
  • Maintain buffet, bush delights, and banqueting areas.
  • Ensure equipment is in working order and correctly stored.
  • Follow menu recipes and ensure accurate execution.

Experience & Skills Required:

  • At least 2+ years of chef experience in a similar role; experience in a similar luxury environment is advantageous.
  • Culinary school diploma or equivalent experience.
  • In-depth knowledge of culinary techniques, trends, and best practices.
  • Excellent organizational and multitasking abilities.
  • Strong leadership and management skills.
  • Proficient in food safety regulations and kitchen hygiene practices.
  • Good verbal and written knowledge of English.
  • Essential pastry knowledge.
  • Passion for kitchen management, including administration, hygiene, and people management.
  • Computer literate.
