Kendrick Recruitment are now seeking a Food and Beverage Manager for a luxury 4* Lodge situated in the Timbavati. The Food & Beverage Manager is responsible for management of the Kitchen and kitchen team, Bar and bar staff, Service and waitrons. You will be responsible for procurement, menu planning, quality control and stock control. They will oversee all meal setups and displays, inspecting all food for correct presentation and temperature, ensuring a smooth flow of service and assisting the guests with any queries or concerns. The supply of necessary tools for the team to conduct their job to the highest standard must be maintained. Hygiene standards and cleaning protocols are key areas of responsibility of the Head of Food & Beverage.
Meet with Management Team at the start of each day with the Head Chef, checking the house list to confirm numbers for meals, early breakfasts, packed lunches, special dietary requirements, etc.
Plan menu together with chefs using weekly menu planner as a guideline.
Assist with food preparation and presentation.
Ensure that all serving bowls and platters are clean and in a good condition.
Ensure use of correct serving utensils and appropriate condiments.
Hold a pre-meal briefing prior to each meal with all service staff.
Print out daily dinner menu for insertion into wine list.
Be a presence at all meals, welcoming all guests to the buffet, boma and coordinating food and drink service.
Ensure kitchen and other workstations and stoves are well cleaned at the end of each shift.
Ensure stock takes are done of all food & beverage.
Place orders, always ensuring quantity & quality of produce with costings.
Attend weekly meetings with the General Manager.
Coordinate special functions, such as bush meals, weddings, holiday menus, etc.
